Potato, Carrot and Herb Soup

  • 1 medium carrot, peeled and diced
  • 1 medium potato, peeled and diced
  • 0.8 cup vegetable stock
  • 1 tbsp chives, finally chopped, reserving a few stalks to garnish
  • 1 tbsp parsley, finally chopped, plus extra garnish (optional)
  • Salt
  • Black Pepper
  • 0.4 cup milk


  1. Place the carrot and potato in a large saucepan, add vegetable stock. Bring to a boil. Reduce the heat and simmer for 15 minutes until the vegetables are soft
  2. Remove from heat and stir through the chopped herbs. Allow to cool slightly
  3. Using a stick blender, blend until smooth
  4. Season to taste with salt and pepper
  5. Pour into a serving bowl
  6. Using a hand-held milk frother/whisk the milk until it becomes foamy. Gently swirl through the soup
  7. Garnish with the whole chives and reserved parsley (optional)
