Smoked Salmon, Asparagus and Artichokes

Ingredients

  • 5 small spears asparagus
  • 1/3 tbsp olive oil
  • Salt
  • 3 slices cold smoked salmon
  • 1 oz artichoke hearts
  • 1 cup spinach

Instructions

  1. In a pan, heat olive oil and fry the asparagus for 1-2 minutes, or until it is softer.
  2. Season with salt
  3. Arrange salmon, artichoke hearts and spinach on a plate, top with fried asparagus
