Summer Salad with New Potatoes, Parma Ham and Pesto

Pesto and prosciutto give this salad a distinctly Italian feel

Ingredients

  • 21 oz new potatoes
  • 14 oz mixed salad leaves
  • 1 small onion, peeled and finely diced
  • 1/2 cup green pesto
  • 1/4 cup vegetable stock
  • 3 oz Parma ham, sliced

Instructions

  1. Cook the potatoes in boiling water for about 20 minutes
  2. Mix the diced onion with the pesto and stock
  3. Drain the potatoes, rinse them in cold water and cut them in half
  4. Mix the salad, potatoes and pesto dressing in large mixing bowl
  5. Garnish with Parma ham
