Ingredients

  • 1 1/2 cups Edamame Beans
  • 2 cups Red Cabbage, Shredded
  • 1 1/2 cups Red Bell Pepper, Sliced
  • 3 cups Pak Choi, Cliced
  • 4 medium Spring Onions, Scallions
  • 3 cups Bean Sprouts
  • 0.7 cup Cashew Nuts, Roasted and Salted
  • 2 tbsp Olive Oil
  • Salt and Pepper

Instructions

  1. Combine all chopped and sliced vegetables in a bowl. Toss with olive oil and season with salt and pepper. Ready to serve!
